Vegan Cherry Almond Crumble Bars

  • 250 g defrosted and drained frozen cherries
  • 100 g oats
  • 150 g plain flour
  • 4 tbsp maple syrup
  • 2 tbsp smooth almond butter
  • 75 g vegan butter
  • 1 tsp corn flour
  • ¼ lemon juiced


  • Preheat the oven to 180ºC.
  • Add the oats to a blender or food processor and blitz until they become a fine, flour-like consistency. Add the blended oats to a mixing bowl with the flour.
  • In a saucepan, melt the maple syrup, butter and almond butter over a medium heat and mix well to combine. Pour the mixture into the mixing bowl with the flour and blended oats. Use a wooden spoon to mix together until a crumbly dough forms.
  • Line a 15cm x 15cm tin with baking paper. Press ¾ of the dough mix into the base of the tin, keeping the remaining ¼ of dough mix to one side. The dough should be around 1cm thick.
  • In a small bowl, mix the defrosted and drained cherries with the lemon juice and cornflour. Spread the cherry mix evenly over the layer of dough in the tin. Crumble the remaining ¼ of dough mix over the cherries.
  • Bake for 15 mins at 180ºC, or until the crumble on top is lightly golden. Leave to cool before slicing into squares.
