Ultimate Vegan Christmas Sandwich

  • 1/2 tin chickpeas, drained
  • 1 tbsp vegan mayo
  • 2 rashers of vegan bacon
  • Handful Brussels sprouts
  • Handful rocket
  • 1 tbsp cranberry sauce
  • 1 tsp dried sage
  • 1 tsp garlic powder
  • 1 tsp white pepper
  • 2 slices sourdough or sandwich bread


  • Fry the bacon for a few minutes until crispy.
  • Add the drained chickpeas to a bowl and mash with a fork. Add the mayo, sage, garlic and pepper and chopped bacon. Mix well!
  • Peel and finely shred the sprouts. Put them into a pan with a tiny drizzle of oil on a high heat and stir regularly until crispy at the edges.
  • Grab your favourite bread and load up your sandwich! I started with lettuce then added the chickpea and bacon mix, cranberry sauce and shredded sprouts.
