Strawberry, Watermelon and Vegan “Feta” Salad with Lime & Balsamic Dressing

Ingredients
  

  • 300 g cubed watermelon
  • 200 g strawberries
  • 150 g cucumber
  • 75 g olives
  • 75 g vegan “feta” Violife is my favourite brand
  • Handful of mint leaves

For the dressing:

  • 2 tbsp lime juice
  • 1 tbsp balsamic vinegar
  • 1 tsp maple syrup

Instructions
 

  • Halve or quarter the strawberries depending on size. Chop the cucumber into quarter rounds about 0.5cm thick. Halve the olives. Add the watermelon and all of the chopped ingredients to a bowl and gently mix together. Season well with salt and pepper.
  • Crumble over the vegan feta and tear the mint leaves over.
  • Mix the dressing ingredients together in a small bowl or shake together in a jar. Pour over the salad, serve and enjoy!
