Pea & Mint Pesto Pasta

  • 150 g dried pasta

For the pesto:

  • 200 g frozen peas
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast
  • 10 g approx 10 sprigs of mint
  • 1 clove of garlic
  • Pinch of salt

To serve:

  • Zest of 1 lemon
  • Mint leaves


  • Put the pasta on to boil as per pack instructions. Steam the frozen peas in a sieve over the the pasta and give them a stir after a couple of minutes. Once fully cooked (around 5 minutes), run under cold water to cool.
  • Add the cooked peas to a blender or food processor (keep a tbsp to garnish with if you like) along with the rest of the pesto ingredients and blitz until smooth. Taste and season/add more lemon juice if required.
  • Once cooked, drain the pasta (reserving a couple of tbsps of pasta water) and put it back into the pot. Add the pesto as well as a splash of the pasta water and mix well.
  • Serve, top with lemon zest and extra mint and enjoy!
