Parsnip, Celeriac and Potato Mash

  • 250 g potato
  • 250 g celeriac
  • 250 g parsnip
  • 2 tsp Dijon mustard
  • 2 tsp vegan butter
  • 2 tsp dijon mustard
  • Salt and pepper


  • Peel and roughly chop the celeriac, parsnips and potatoes.
  • Add the celeriac to a large saucepan and cover with boiling water and add a pinch of salt. Bring to the boil and continue to boil for 5 minutes before adding the parsnips and potatoes.
  • Boil for a further 10-15 minutes or until everything is soft enough to easily put a knife through. Drain the veg and add to a food processor with the mustard, butter and a generous pinch of salt and pepper.
  • Blend until smooth and creamy. Serve and enjoy!
