Parsley and Walnut Pesto Pasta


  • 2 servings of your favourite pasta

For the pesto

  • 100 ml olive oil
  • 30 g flat leaf parsley
  • 30 g kale
  • 25 g walnuts or other nuts
  • 2-3 tbsp nutritional yeast
  • 1 clove of garlic
  • 2 tsp lemon juice
  • Generous pinch of salt and pepper.

To serve

  • Chilli flakes
  • Vegan cheese


  • Put your pasta on to boil as per pack instructions.
  • Make the pesto by adding all of the ingredients to a blender and blending until smooth. Season to taste (or add more lemon or nutritional yeast as required).
  • Toss the pesto through the cooked pasta, with a bit of pasta water if you like, and serve. Top with the chilli flakes and vegan cheese and enjoy!
