Miso Maple Roasted Radishes with Coriander and Lime Dip


For the maple roasted radishes:

  • 150 g radishes
  • 1 tbsp maple syrup
  • 1 tbsp miso
  • 1 tbsp sesame oil

For the coriander and lime dip:

  • 100 g cooked edamame
  • 125 g or 1/2 tin of cannellini beans
  • Handful Coriander
  • 1 garlic clove
  • 1/2 green chilli
  • Zest and juice of 1 lime
  • 1 tbsp olive oil

To serve:

  • Sesame seeds
  • Coriander
  • Lime wedge


  • Pre-heat the oven to 200ºC. Halve or quarter the radishes depending on size. Mix the maple, miso and sesame oil together in a bowl. Add the radishes to the bowl and mix round until well coated. Spread the radishes over a lined baking tray and roast for 15-20 minutes until fork tender.
  • Meanwhile, make the coriander and lime dip. Add the edamame, cannellini beans, coriander, garlic, chilli, lime zest and juice and oil to a blender or food processor with a generous pinch of salt and blend until smooth. Season with salt and pepper or add more lime juice if needed.
  • Spread the dip over a plate and top with the roasted radishes. Garnish with sesame seeds, coriander and a squeeze of lime. Enjoy!
