Mango Noodle Salad with Peanut Lime Dressing

  • 75 g dried rice noodles
  • 150 g edamame cooked
  • 200 g mango
  • 200 g cucumber
  • 3 spring onions
  • 2 tbsp chopped coriander
  • For the dressing:
  • 2 tbsp peanut butter
  • 1 tbsp lime juice
  • 1 tbsp water
  • Zest of 1 lime
  • 1 tsp soy sauce/tamari
  • Extra water as needed
  • To serve optional:
  • 2 tbsp chopped peanuts
  • 1/2 red chilli diced


  • Cook the noodles as per pack instructions. Rinse in cold water and drain, drizzling with a little bit of oil to stop them sticking together and season with a pinch of salt. Add them to a large bowl.
  • Dice the cucumber and finely slice the spring onion. Cut the mango into chunks. Add them all to the noodles along with the edamame and coriander. Mix everything together.
  • Add the peanut butter, lime juice and water to a small bowl and mix together until combined. It should turn creamy and be a drizzling consistency. Add the soy sauce and lime zest and mix again. If too thick at this point, thin down with a splash of water.
  • Pour the dressing over the noodles and mix everything together. Add your toppings, serve and enjoy!
