Lemon, Dill, Tomato and White Bean Salad

Ingredients
  

  • 1 tin of cannellini beans
  • 1 tin of butter beans
  • 2 lemons zest and juice
  • Sea salt
  • 1 small courgette around 120-150g
  • 140 g hummus
  • 175 g cherry vine tomatoes
  • 75 g sun-dried tomatoes
  • 20 g dill finely chopped
  • 1 tsp chilli flakes optional

Instructions
 

  • Drain the beans well and add to a large bowl with the lemon juice and zest. Mix well. Julienne or grate the courgette and add to the bowl. Season well with salt and pepper and mix.
  • Add the hummus to the bowl and stir through the beans and courgette.
  • Quarter the cherry tomatoes and season well. Roughly chop the sun-dried tomatoes. Add both to the bowl along with the dill and chilli flakes (if using) and mix everything together.
  • Serve and enjoy!
