Miso Roasted Red Cabbage with Peanut Dressing

I promise once you’ve tried this miso roasted cabbage recipe, you’ll never eat it any other way again! When it’s roasted, the edges go charred and crispy bringing out a real sweetness. The charred red cabbage combined with umami miso and the creamy peanut dressing is a match made in heaven.

The roasted cabbage steaks work well as a side, or as the main event accompanied by rice, noodles or salad. Instead of roasting the cabbage in the oven, you can also cook it on a barbecue or grill on something like a George Foreman or cast iron griddle pan for a similar flavour.

Peanut Dressing

For the dressing, I like to use peanut butter made from 100% peanuts with no added salt or sugar. Smooth peanut butter blends best in the dressing but chunky will also work well. It’s a seriously versatile dressing that will add flavour to all kinds of roast veggies and salad — it’s delicious mixed into a slaw with a flavour-boosting hit of umami coming from the miso.

Cabbage

I don’t know about you, but I always find myself with cabbage in the fridge to use up. It’s one of those veggies I buy, use a bit of and then forget about until it’s almost too late. This is a great way to use up a whole cabbage in one go! You can also use pre-sliced cabbage or shredded cabbage, but it will cook more quickly so reduce the roasting time. Keep checking it every few minutes after the first 10 minutes to make sure it doesn’t burn.

Miso

Miso seasons the cabbage really well, giving it a salty, umami kick which contrasts perfectly with its slight natural sweetness. I think miso is such an underrated ingredient, it doesn’t get nearly enough credit! I always have a jar in the fridge and find myself reaching for it all the time — ramen broths, soups, stir-fries, dressings… you name it, miso adds a hit of flavour to it. Ingredients
  

  • 1 small red cabbage
  • 1 tbsp miso
  • 2 tbsp sesame oil
  • 1/2 lime

Satay Dressing

  • 1 tsp miso
  • 1 tbsp peanut butter
  • 1 tbsp water
  • 1 tbsp lime juice
  • 1 tsp sesame oil

Instructions
 

  • Slice the cabbage into steaks about 2cm thick. Spread over a lined baking tray.
  • Mix the miso and sesame oil together into a paste. Brush the cabbage on both sides.
  • Roast at 200°C for 30 minutes. While roasting, mix up the dressing ingredients with a teaspoon or fork.
  • Remove the cabbage from the oven and squeeze over the 1/2 lime. Drizzle with the dressing and enjoy!
