Crispy Air Fryer Cajun Potato Wedges with Garlic Mayo

Ingredients
  

  • 500 g potatoes
  • 2 tbsp olive oil
  • 5 tsp cajun seasoning
  • Pinch of salt

For the garlic mayo:

  • 4 tbsp vegan mayo
  • 1 large garlic clove minced
  • 1 tsp chopped parsley

Instructions
 

  • Cut the potatoes into wedges and add to a pot. Cover with boiling water, add a pinch of salt and bring to the boil on a medium/high heat.
  • Once bubbles appear, set a timer and boil for 4 minutes. Drain, rinse with cold water and pat dry.
  • Add to a large bowl and cover with the olive oil and cajun seasoning. Gently toss the potatoes around until they’re fully coated. 


  • Pop them into your airfryer, spreading them evenly so they don’t overlap. Roast at 200ºC for 15-20 minutes or until crisp and golden.
  • Mix the ingredients for the garlic mayo together. Serve, dip and enjoy!
