Creamy Truffle and Artichoke Pasta

  • 2 portions of pasta I use pappardelle
  • 1 clove of garlic
  • 125 g silken tofu
  • 125 g drained artichokes
  • 1 tsp truffle oil
  • 1/2 tsp lemon juice


  • Chopped parsley


  • Put your pasta on to boil in salted water and cook as per pack instructions.
  • Meanwhile, add the silken tofu, artichokes, truffle oil and lemon juice to a blender or use a hand blender and blitz until smooth. Season well with salt and pepper to taste.
  • Once al dente, drain the pasta and reserve 125ml pasta water. Add the sauce, pasta water and drained pasta back into the pan and toss together gently over the heat until the pasta is well coated.
  • Serve, top with chopped parsley and a grind of black pepper and enjoy!
