Vegan Creamy Mushrooms on Toast

Ingredients
  

  • 2 tsp vegan butter
  • 2 cloves of garlic
  • 100 g mushrooms I used oyster
  • Handful of thyme sprigs
  • 5 tbsp unsweetened soya yoghurt
  • 1 tsp nutritional yeast

Instructions
 

  • Melt the butter in a pan and grate (or mince) the cloves of garlic and add them in. Tear the mushrooms into the pan and leave to sizzle for a minute or so before moving. Add the thyme leaves. Stir as few times as you can — this will stop the mushrooms going slimy and let them get nice and golden.
  • Once golden, add the yoghurt and nutritional yeast and mix. Season to taste.
  • Make your toast. Top with the creamy mushrooms and enjoy!
