Chocolate Chip Banana Muffins

The first lockdown is synonymous with banana bread so for lockdown 3.0 I’m bringing you… vegan banana muffins!

One of these with a cuppa when they’re fresh out of the oven is something special, I’m telling you! Warm and fluffy in the middle with melted chocolate chips: it’s a dreamy combination.

Chocolate chip muffins are such a crowd pleaser and never last longer than 24 hours in my house! Whip up a batch and enjoy them as a breakfast snack or a sweet treat with a cuppa.

Chocolate Chip Banana Muffins

Light, fluffy muffins made with bananas and dark chocolate chips.

Ingredients
  

  • 4 medium-sized ripe bananas
  • 120 g plain or buckwheat flour
  • 5 tbsp melted coconut oil
  • 4 tbsp plant milk
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • 75 g dark chocolate chips

Instructions
 

  • Preheat the oven to 180ºC. Add the bananas to a mixing bowl and mash with a potato master/fork or use a hand mixer until smooth.
  • Mix in the melted coconut oil, maple syrup and vanilla. Gradually whisk in the milk.
  • Mix the baking powder with the flour and add to the mixing bowl. Fold everything together until well combined. Stir through the chocolate chips.
  • Spoon the mix into 10 cupcake cases or greased muffin tray.
  • Bake at 180°C for 15-20 minutes or until slightly golden and a skewer comes out clean. Enjoy (they’re extra tasty when they’re still warm)!
