Carrot Cake Oats

Ingredients
  

  • 45 g oats
  • 85 g carrot grated
  • 1 red apple grated
  • 2 dates finely chopped
  • 1 tablespoon ground flaxseed
  • 1 tablespoon ground almonds
  • 1 tsp cinnamon
  • 250 ml boiling water
  • 50 ml plant milk

Toppings

  • 2 tbsp vegan yoghurt
  • Maple syrup
  • 15 g walnuts chopped

Instructions
 

  • Add the oats, carrot, apple, dates, flaxseed and ground almonds to a pot. Pour in the boiling water and mix well.
  • Add the cinnamon and stir over a low heat for 3-5 minutes until thick and creamy. Add the milk and stir again.
  • Serve, top with the yoghurt, chopped walnuts and a drizzle of maple syrup.
