Caramelised Banana & Pecan Chia Pudding

I’ve been having chia pudding instead of porridge recently (controversial I know) and honestly think I might prefer it. I’m all about that extra omega-3 and by using a combination of chia and flax seeds, this breakfast bowl really packs it in.

If you’ve not already tried caramelised banana, you’re missing out. Think sticky, sweet, warm and buttery. Tossing the pecans in the pan with the remaining caramel mixture brings out their nutty flavour and adds a sticky, sweet coating.

Caramelised Banana & Pecans

  • 1 small banana
  • Small handful of pecans
  • 2 tsp maple syrup
  • 2 tsp dairy-free butter
  • 1/2 tsp cinnamon

Chia Pudding

  • 2 tbsp chia seeds
  • 2 tbsp flax seed
  • 300 ml almond milk or any dairy-free milk
  • 2 tsp maple syrup
  • 1 tsp vanilla extract optional

To Serve

  • 2 tbsp dairy-free coconut yoghurt
  • A few cacao nibs


  • Mix all of the chia pudding ingredients together. Pop into the fridge and leave to thicken in a bowl overnight or at least for a few hours.
  • Add the butter, maple syrup and cinnamon to a small frying pan on a medium heat. Once the butter has melted, chop the banana and add to the pan.
  • Spoon the butter and syrup mixture over the bananas continuously until they start to turn golden round the edges.
  • Carefully remove the banana slices from the pan and place on top of the chia pudding. Roughly chop the pecans and add to the pan.
  • Toss the pecans around in the remaining caramel before spooning onto the chia pudding. Dollop on the dairy-free yoghurt and sprinkle with cacao nibs if you’re using them.
