Bruschetta Pasta

  • 2 portions of pasta I use rigatoni
  • 2 cloves of garlic
  • 2 tbsp extra virgin olive oil
  • 250 g cherry or baby plum tomatoes vine-ripened if possible
  • 1 large slice of bread slightly stale is best
  • 1 handful basil


  • Put your pasta on to boil as per packet instructions.
  • Grate or mince the garlic cloves into a large bowl. Add the olive oil and mix well.
  • Halve or quarter the tomatoes depending on size and add to the bowl. Season well with salt and pepper and mix everything together.
  • Once the pasta is al dente, drain and add to the bowl. Mix well.
  • Roughly grate the bread into a small pan and drizzle with a bit of oil. Toast until golden.
  • Shred the basil and mix through the pasta just before serving. Serve up, top with crispy breadcrumbs and enjoy!
